So, I weighed myself on Jan.1 and it’s not pleasant. “Weight Watchers, take me back!”
This is a brief post to recommend something to you if you are trying to lose excess weight after the holidays. Everyone likes it. Both my daughter and husband want seconds.
Have it as a snack or you can make it a meal if you add some protein on the side. This makes a big batch to keep in your fridge for four or five days. I know it’s not a hot soup for the winter months but think of it as a handy chopped salad.
Spicy Gazpacho For a Healthy Snack To Lose Weight
A one-cup serving is about one Weight Watchers point.
I figure that it’s one point as all the vegetables are zero points and the approximately 1/2 cup of Spicy V-8 is one point. It’s like a “pico de gallo” chopped chilled vegetable soup. You could also use the low Sodium V-8 or the regular/not spicy V-8.
The spice and crunch make it satisfying.

- 8 to 10 Roma tomatoes with cores removed
- one red bell pepper with core removed
- 1/2 sweet white onion peeled
- 1 bunch cilantro leaves
- 3 Persian cucumber or 1/2 hothouse cucumber
- 2 lemons, juiced
- 1/4 cup red wine vinegar
- 64 oz. bottle of Spicy V-8 juice or low sodium V-8

Individually coarsely chop all the vegetables and cilantro and put into a large airtight container. Pour in the lemon juice, vinegar, and V-8 juice. Stir well. Chill for about an hour and serve.

I made your soup, and it was wonderful! I actually enjoyed a pureed version, using my Vitamix, which makes it easy to sip. Whether from a glass at home or a thermos at work, it’s terrific.

Oh man – it’s a really good thing I lost a few pounds before the Holidays because for the first time _ ever _ I gained weight during. I ate SO MUCH FOOD!! I always overindulge on party food but rarely in such ridiculous quantity. My stomach still hurts.
I’m trying an auto-immune protocol for the next month, for a variety of reasons, so no nightshades – unfortunately your beautiful gazpacho is not on the menu. But I’ll be cheering all of us on with my bone broth (even though that doesn’t sound nearly as good now).

Mostly trying to limit carbs and wine…basically Weight Watchers.
This looks delicious. Most of us have gained a few lbs. since the holidays are just too hard to pass on. I’ve stepped up my walking and am making a conscientious effort to eat fewer sweets. I’ll have to make a batch of soup.

You can make it with the regular V-8 and/or low-sodium. Gluten-free!
This sounds delish and I’m going to make it. I’ll probably use half spicy and half original V-8 juice. I feel your pain about the scale. I had double pneumonia in early September and my fitness routine came to a screeching halt. To make matters worse I over-indulged during the holidays. This gazpacho will be great to reach for instead of something laden with sugar and carbs.
That’s a good idea, Treva. It’s not too spicy for us but it probably would be for many people. Glad you are doing better. I’m fighting a cold… I would hate to get pneumonia!
