Simple Appetizer Trio With Roasted Rosemary Cashews

When we lived in Paris 20 years ago, I remember being surprised at how the French appetizers (apéritifs) were very light and simple…just nuts, olives, and sometimes potato chips served in small bowls! Something to nibble on with a glass of chilled rosé or Champagne. This leaves your appetite ready for dinner. And you feel chic doing this as the hostess.

Easy Roasted Rosemary Cashews

This just has five ingredients

Roasted Rosemary Cashews

Course Appetizer
Keyword nuts, rosemary, cashews, cayenne, cashews

Ingredients

  • 1 lb. roasted cashew nuts with sea salt
  • 1/2 tsp. cayenne or more to taste. I used 1 tsp.
  • 2 tbsp. coarsely chopped fresh rosemary leaves
  • 3 tsp. dark brown sugar
  • 2 tbsp. melted butter

Instructions

  • Preheat the oven to 375 degrees F.
  • Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, cayenne, sugar, salt, and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm.

Party Favors: Spiced Nuts In Mini Mason Jars

This recipe makes a lot! Send some spiced rosemary cashews home with your guests (when we can have them)! I put the cashews in mini mason jars with round labels (similar) garnished with ribbon and a rosemary sprig. 

If you are new here, we live in a 100-year-old apartment in San Francisco. Last weekend, my daughter and her boyfriend were here for my husband, Howard’s birthday.

I set the table with an indigo table throw from Pottery Barn and pink peonies from Trader Joes.

    I love light appetizers. There’s nothing more discouraging than fixing a lovely meal only to fill up on appetizers and not have room for the main event. 🙂 I love the 3 items on your menu so that would work for me!

    Mary Ann- As usual, you make everything beautiful and special. I love how you used a throw as your tablecloth and I love your simple appetizers. The French really know how to elevate everything…even a bowl of potato chips! I love how you use your travel and having lived in France to inspire you to create this for your family and friends. This reminds me of the beautiful cheeseboard you had waiting for us the first time I visited you in SF!
