How To Extend That Wonderful Vacation Feeling At Home


Yeah, well, I’m not going to lie…
  there can be some letdown after a big vacation when you 
 come home to bills, laundry and work.  
Here’s what can help…


1.  Try making some of the best dishes you had on vacation.
Caponatina was served at practically every meal in Sicily either as a side dish or appetizer.

Alie’s Eggplant Caponatina
•sauté one chopped onion in olive oil with 1/2 cup of pitted olives and 1/4 cup capers
•stir in one can chopped tomatoes
•grill one sliced eggplant and 2 peppers and 2 squashes.  
When cooked, chop and add to tomatoes and onions.
• add salt and pepper, two tablespoons sugar and  1/3 cup white wine vinegar
•mix, taste and garnish with toasted pine nuts and fresh basil
Serve warm or at room temperature.
Easy Orange, Fresh Fennel, Mint and Scallion Salad
We had this on a sailboat on the Mediterranean Sea.
It’s the four ingredients mentioned in the title and just drizzle with honey.

3.  Buy yourself some blooms or pick some 
from your garden.

I picked these from my sister, Teresa’s back yard.
4.  Go through your vacation photos and pick a couple to frame

5. After you are unpacked and the house is clean, 
turn on some music, give yourself permission
 to just relax with your feet up 
in your “home sweet home.”
