Mason Jars…”so Hottt right now.”
My son, Tommy and I hiked to Crystal Lake in
Mammoth Lakes, California. You can only get there on foot.
I collected some wild flowers for the table on the way back.
Early the next day, I started
Chicken And White Bean Chili in the crock pot for
Chicken Chili and Corn Bread in a Mason Jar.
Recipe
2 lbs. boneless chicken breast cubed
one onion, chopped
three cloves garlic chopped
one quart chicken broth
3 cans cannelli or white northern beans
1 tbs. cumin
1 tbs. herbes de Provence
sea salt and pepper
1/2 package chopped kale with carrots
Put it all in the crock pot and cook for eight hours
(except the kale–I added it the last hour)
If you want a thicker chili, you can mix two tbs. cornstarch with a
little water and stir it in also during the last hour.
Adjust the seasoning.
I got the chili/corn bread in a mason jar idea from
Yvonne at Stone Gable.

Fill the jars with the slightly cooled chili to about 2/3 full.
Top with the corn bread mixture (I just used Jiffy).

Bake in the oven at 400 degrees for about 15 minutes…
during the last three minutes,
I sprinkled grated cheddar cheese on top.
If desired, serve with chopped cilantro, a drop of salsa
and hot sauce on the side.
Next time I make this, I think I will try it in French onion soup bowls.
The day before, I made brownies that I sprinkled with chocolate chips. After the pan cooled…
I spread soften vanilla ice cream on the brownies.
Then decorated it with more chips
and popped it back into the freezer
to serve after dinner the next day (so easy).
We deserved it (sort of) after our
hike around Convict Lake, Mammoth Lakes.
My daughter, Alie said we looked like an L.L. Bean advertisement.
