We are having an amazing time on vacation in Mykonos, Greece. Before I left, I made my favorite light Greek dishes that I want to share with you. I’ve also included some photos of our time here on this beautiful island.

Project Design: Our Favorite Summer Barbecue Recipes!
Last month I made these tasty Greek turkey burgers for our family in San Diego. Everyone wanted the recipe! I even made them twice! Once I served them with corn and grilled vegetables and another time with watermelon, feta, and mint salad.
While cooking, I had Greece on the brain since I knew we would be leaving soon and here we are!
Grilled Greek Turkey Burger Recipe

Serve on toasted or grilled ciabatta rolls (or without bread if you are watching your weight). I adapted this recipe from a cooking episode that I saw on The Dish on Dr. Oz.
- 1/3 cup chopped parsley
- 1 lb. lean ground turkey
- 1/2 tsp. pepper
- 1 to 2 tsp. salt
- 1 tbsp Worcestershire sauce
- 1 tbsp. Dijon mustard
- 1/2 tsp. Garlic powder
- 2 ounces Crumbled Feta From feta in a block
- 1 1 cucumber, diced (plus 1/2 cucumber thinly-sliced to place on top of burger)
- 3 cups Greek yogurt
- 1 clove garlic, minced
- 3 tbsp lemon juice
- 1 tbsp fresh dill
- 1/2 red onion thinly sliced

In a medium bowl, mix 1/3 cup parsley, turkey, pepper, 1/2 tsp salt, Worcestershire sauce, Dijon mustard, garlic powder, and feta.

Form four to five equal patties.

Grill or broil for 5-6 minutes on each side or until done. I used a spray like Pam on the grill.

Strain the yogurt overnight or for a few hours in the refrigerator.

Peel one cucumber and dice. Put cucumber pieces into a colander and sprinkle with the salt. Cover with a plate or lid. Let it sit for 30 minutes, then drain well and blot dry with a paper towel.

In a food processor or blender, add the cucumber, garlic, lemon juice, dill, parsley, and a few grinds of black pepper. Process until well-blended, then stir into the yogurt. Taste before adding extra salt.

Place in the refrigerator for at least 2 hours before serving with burgers.
Greek Watermelon Salad with Parsley and Mint
- 3 cups cubed watermelon
- 2 large ripe tomatoes
- 1 medium cucumber
- 1 small red onion
- ⅓ cup pitted kalamata olives
- ⅓ cup crumbled feta
- Some chopped parsley and mint
- Olive oil and red wine vinegar
- Salt and pepper
In a large bowl combine 3 cups cubed watermelon; 2 large ripe tomatoes, chopped; 1 medium cucumber, peeled, seeded and chopped; 1 small red onion, sliced; 1/3 cup pitted kalamata olives; 1/3 cup crumbled feta; and some chopped parsley and mint. Drizzle with olive oil and red-wine vinegar, sprinkle with salt and pepper, toss and serve.
Grilled Foil Wrapped Ears of Corn with Lime
Place one ear of corn on a square of aluminum foil and slather with soft butter. Sprinkle with salt, pepper, and paprika. Add lime slices (as below). Wrap and grill on medium heat for 15 minutes.
Grilled Vegetable Medley
Note: Since these ingredients are similar to the Watermelon Salad, I would serve one or the other.
- one eggplant, sliced (place on paper towels and sprinkle with salt–let stand for at least 30 minutes while the salt draws out bitterness–then wipe the salt off)
- one small red onion chopped
- two red peppers chopped
- ⅓ cup pitted kalamata olives
- ⅓ cup crumbled feta
- Some chopped parsley and basil
- Olive oil and red wine vinegar
- Salt and pepper
Grill vegetables until lightly charred. Sprinkle olives, cheese, and herbs on top. Drizzle with oil and vinegar. Salt and pepper to taste.

Loved the turkey burger recipe. Found it a bit messy to eat on chiabatta roll so next time served just the burger patty over greens with all of the other elements except the bread…perfect!

The burgers are so good, but the salt content is high. If you’ve got the recipe on your menu anytime soon, I don’t recommend 3tsp of salt.
Thanks, Ellie. I adapted the recipe from different sources and they all have a high salt content to bring out the flavor. But you are right that you could add more at the end if needed.

I love mexican street corn (or should I say greek street corn) and I am adding this turkey burger recipe to my rotation. It is so hard to prepare turkey burgers that aren’t too dry or so moist they fall apart! This one sounds like a winner!!
