Butternut Squash Ravioli With Garlic and Corn

This is a quick dish using Trader Joe's raviolis and fresh or frozen corn. Serves 2+ as a main dish or four as a side dish.

Ingredients

  • 2 tbs. olive oil
  • 2/3 cup fresh or frozen corn kernels I used fresh corn off two corn cobs.
  • 2 cloves chopped garlic
  • 3 tbs. chopped parsley or basil
  • 1 package fresh butternut squash ravioli from Trader Joes
  • 2 tbs. butter

Instructions

  • Heat the oil over medium heat and cook garlic and corn until lightly browned (about 10-15 minutes). Meanwhile, cook ravioli according to instructions.
  • Drain ravioli, put back in the pan with butter to prevent sticking (it will melt), and gently stir. Add corn mixture. Top with parsley and serve.
