Tasty Autumn Salad with Pear, Arugula and Roasted Pumpkin Seeds

Ingredients

Lemon Shallot Vinaigrette

  • 2 tbsp fresh lemon juice
  • 1/4 cup red wine vinegar
  • 2 tbsp Dijon mustard
  • 1/2 shallot minced
  • 1/2 cup olive oil extra virgin
  • Sea salt and pepper to taste

Salad Ingredients

  • 2 pears sliced
  • 2 cups arugula
  • 1/2 cup crumbled feta cheese
  • 1 cup sliced fennel
  • 1/3 cup spiced pumpkin seeds from Trader Joes

Instructions

  1. Add all vinaigrette ingredients to a jar and shake well before serving.

  2. Arrange salad ingredients on plates and drizzle with olive oil
