Colleen's Lentil Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 2 bay leaves
  • 3 chopped tomatoes or 1 can crushed or diced tomatoes (14.5oz)
  • 1 lb. dried lentils
  • 8 cups chicken broth
  • 1 cup chopped spinach
  • 2 tbsp red wine vinegar
  • 1 - 2 tsp kosher salt
  • pepper
  • grated parmesan cheese

Instructions

  1. In a large pot, heat oil and saute onions, carrots and celery 5 minutes.  Add in garlic and spices.

  2. Stir in lentils, broth and tomatoes.  Bring to a boil, reduce heat and simmer 1 hour.  Just before serving, add in spinach and stir in vinegar.

  3. Serve with grated parmesan and fresh baguette.
