Grandma Winnie's Excellent Potato Salad

This is my husband's family recipe.

Potato Salad Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp yellow mustard
  • 2 tbsp juice from olive jar as needed to thin sauce
  • 1 pinch salt, pepper and celery salt to taste

Potato Salad Ingredients

  • 2 lbs russet potatoes peeled and chopped
  • 1 whole sweet onion chopped
  • 6 eggs hard boiled chopped
  • 3 stalks celery chopped
  • 1/2 cup green olives stuffed with pimentos chopped


  1. Mix sauce ingredients well and set aside.

  2. Boil the potatoes until soft but not mushy. Cool slightly.

  3. Add the potatoes and other ingredients to a bowl and blend in the sauce.

  4. Chill overnight and sprinkle with paprika before serving if desired.
