Butternut Squash Ravioli With Garlic and Corn

This is a quick dish using Trader Joe's raviolis and fresh or frozen corn. Serves 2+ as a main dish or four as a side dish.

Ingredients

  • 2 tbs. olive oil
  • 2/3 cup fresh or frozen corn kernels I used fresh corn off two corn cobs.
  • 2 cloves chopped garlic
  • 3 tbs. chopped parsley or basil
  • 1 package fresh butternut squash ravioli from Trader Joes
  • 2 tbs. butter

Instructions

  1. Heat the oil over medium heat and cook garlic and corn until lightly browned (about 10-15 minutes). Meanwhile, cook ravioli according to instructions.

  2. Drain ravioli, put back in the pan with butter to prevent sticking (it will melt), and gently stir. Add corn mixture. Top with parsley and serve.
