Serve on toasted or grilled ciabatta rolls (or without bread if you are watching your weight). I adapted this recipe from a cooking episode that I saw on The Dish on Dr. Oz.
In a medium bowl, mix 1/3 cup parsley, turkey, pepper, 1/2 tsp salt, Worcestershire sauce, Dijon mustard, garlic powder, and feta.
Form four to five equal patties.
Grill or broil for 5-6 minutes on each side or until done. I used a spray like Pam on the grill.
Strain the yogurt overnight or for a few hours in the refrigerator.
Peel one cucumber and dice. Put cucumber pieces into a colander and sprinkle with the salt. Cover with a plate or lid. Let it sit for 30 minutes, then drain well and blot dry with a paper towel.
In a food processor or blender, add the cucumber, garlic, lemon juice, dill, parsley, and a few grinds of black pepper. Process until well-blended, then stir into the yogurt. Taste before adding extra salt.
Place in the refrigerator for at least 2 hours before serving with burgers.
