Juliska Country Estate Salad Plate
mix well with all my white plates.
Two nights ago, when my cousin, Patricia arrived here in California after a long flight from New Jersey, I served her my lentil salad. She loved it and asked for the recipe…so, I thought I would give it to you, too!
Vegetable Lentil Salad
1 package steamed, vacuum packed lentils (Trader Joe’s has them)
Juice from one lemon
2-3 tbs finely chopped red onion
2 celery stalks chopped
1 Persian or 1/2 hot house cucumber chopped
1/2 red, yellow or orange pepper chopped
3 tbs chopped parsley
Olive oil
Sea salt and pepper
In large bowl squeeze the juice of one lemon over the lentils and let sit while you chop the rest of the ingredients.
Then add the rest of the ingredients, drizzle with olive oil. Stir and season with salt and pepper to taste. Serve cold or at room temperature. I put some on top of arugula above.

I honestly don't know which item is my favorite – the salad, the plates, the flip flops or the candles – thank goodness I don't have to pick! Will definitely be looking out for those candles and flip flops and will have to try that salad too – just had a lentil, kumquat and arugula salad at Greenleaf and it was delish!!!

Funny we just gave a good friend a set of that Juliska pattern as a housewarming gift (from a group of us) Its beautiful and she loved it. I like the look of the candles.

The summer salad looks great and I keep most things on hand. I haven't seen the "Persian cucumber" in our markets. We normally have local cukes or the long English cukes. Would either of those work?

Love the lentil salad, I have made a similar salad that I had at the old ABC store restaurant in NYC. It is served warm with goat cheese crumbled on top. I think I have too many Havaianas to add another pair but those are adorable.

I love anything Juliska and those plates are a must have! They will go perfectly on one of your fabulous table settings. Thank you for sharing your Lentil Salad recipe. I use those steamed lentils from TJ's all the time in soup but never in a salad…I'll definitely try it. And I could not live without my Havaianans! I'm wearing a pair right now!!
