My cousin was visiting from Northern California this weekend and we wanted to have a
relaxing dinner at home. I prepared this Roasted Vegetable Tart from
the January issue of “Bon Appétit.”
Since I roasted the vegetables and made the crust the night before, it was easy to assemble.
I added the chopped parsley for a little more color. This would also be a good main course for a brunch or lunch…
in fact, we reheated it for breakfast the following day.

I made extra ribs so we would have leftovers.
The orange segments in the salad carries the citrus theme through to the lemon sorbet dessert
(store bought, with a spritz of fresh lemon juice).

My cousin (an avid gardener) and I strolled around Roger’s Gardens in Newport Beach.
